A quest is asking me to "collect oil in the wilderness." Any idea how I'm supposed to do that? The guide arrow isn't even showing up to point me in the right direction. Help!

Hi there Madelei!
I'll guide you to the oil.
Let's imagine you're in the Wilderness and right in front of the Timberjack Taxi (the reddish dragon that is sitting with folded wings)
Now, if you look right, there are two torches, each one next to a way. Follow the way down and go to the shore of the lake
See the island with some trees on it? Go on it! And go to the end of the island.
You're now standing in front of a rock wall. The oil should be somewhere at the feet of this rock wall, right at the water. It looks like a little flask, and it should have a small sparkling animation. If you're unsure, unmount your dragon. Sometimes, dragons find items faster than you, and s/he'll carry the item right to you!

I have the same problem. I've gone to the spot you described but the bottle wasn't there. Or anywhere in the wilderness :/ I just can't find it :(
